چکیده
In this study, the effect of cultivar, harvest year, and geographic regions (Mediterranean, Aegean, Southeastern Anatolia, Marmara, Black Sea) on phenolic compounds virgin olive oils were investigated. Tyrosol was major compound in Mediterranean, Southeastern, Sea regions. Hydroxytyrosol showed highest value (2.07 mg/kg) Anatolia region lowest (0.75 Marmara region. Among acids, vanillic acid had an important place (p < 0.01). This gave higher values compared to other Flavonoids determined as groups oils. The from separated with levels flavonoids such quercetin, luteolin, apigenin. All compounds, except transcinnamic increased second year. Vanillic first contrast, tyrosol than Many affected by cultivar. Memecik has a content tyrosol, acid, p-coumaric ferulic quercetin Aegean However, variety for hydroxytyrosol, apigenin Gemlik, Ayvalık, Çelebi, Domat acid. Butko, Otur Kızıl Satı tyrosol. Principal component analysis that could play role separation cultivars.

Antifungal Activity of Phenolic Compounds Extracted from Dried Olive Pomace
The antifungal activity of phenolic compounds extracted from olive pomace against Alternaria solani, Botrytis cinerea and Fusarium culmorum was investigated. Olive pomace, a by-product of olive oil production, was used as a source of phenolic compounds. The extracted phenolics were added to a medium to reach phenol concentration of 0.1 and 0.2 % (w/v) and tested for their antifungal activity ag...

Olive oil can be considered as a functional food because they carry a number of beneficial effects on the organism beyond nutritional benefits accepted. Studies conducted so far have shown that phenolic compounds in olive oil have positive effects on various physiological biomarkers, while exhibiting high bioavailability. Experimental studies (in vivo and in vitro) on phenolic compounds in oliv...
متن کاملBiological Activities of Phenolic Compounds Present in Virgin Olive Oil
The Mediterranean diet is associated with a lower incidence of atherosclerosis, cardiovascular disease, neurodegenerative diseases and certain types of cancer. The apparent health benefits have been partially ascribed to the dietary consumption of virgin olive oil by Mediterranean populations. Much research has focused on the biologically active phenolic compounds naturally present in virgin ol...

This paper reports the protective effect of the phenolic fraction extracted from extra virgin olive oils (OOPEs) against the cytotoxic effects of reactive oxygen species in human erythrocytes and Caco-2 cells, employed as model systems. Pretreatment of cells with various OOPEs, indeed, provides a remarkable protection against oxidative damages: this effect was strictly dependent on the o-diphen...
